The Bushmans Breakfast - Top of the 'Shack Snack' Stack!

This next yummy ‘snack shack’ is dedicated to an iconic home-grown hero, the Aussie Bushman. The Aussie Bushman is one who lives or travels around outback rural Australia raising cattle and sheep or farming wheat. Ten-year droughts, biblical-style floods and bush-fires whistling through the scrub are just some of the rough challenges that Aussie Bushmen face in the tough rural Oz terrain, not to mention finding the love of a good woman.

For many of these great hunky fellas, an Aussie Bushman’s Breakfast is the perfect way to start the day, knowing it will keep them going hard and strong on the saddle of a horse until the sun sets over a sunburnt land.

Just like a DXer planning a big day behind the microphone, it’s important to kick-start the day with a snack shack that not only satisfies the appetite but provides you with the necessary energy to work through DX pile ups.

Without doubt, one of the best breakfasts is that eaten by the great Aussie Bushman, so here’s my special recipe:

Ingredients

* 2 lamb loin chops
* 2 thick sausages
* 2 rashers bacon
* 100g mushrooms
* 1 large tomato (cut in half)
* 2tbs grated cheddar cheese
* 1tbs oil
* 2 eggs.

Method

1. Trim chops of excess fat, pierce sausages with a fork and place them on an oiled grill tray
2. Cook under high heat for 2 minutes, turn and cook for a further 2 minutes. [Continue cooking chops and sausages until they are done to your liking].
3. In a pan, fry bacon until crisp, then remove and keep warm.
4. Add mushrooms, cook briefly and keep warm also.
5. After 4 minutes of cooking time, place a cut side down tomato on the grill tray.
6. Cook for 2 minutes, turn, sprinkle with cheese on top and cook until tender.
7. About 3 minutes before serving, heat oil in frying pan, cook eggs over low heat, serve with cooked meat, tomato, bacon and mushrooms.
