Pikelets — A Yummy Snack in the Shack!

Like shopping for new shoes, food is a vital part of our lives. It sustains us and gives us energy to live, work, and play — not to mention DX. Working huge pile ups of friends on your radio or participating in major contests which require hours and hours behind the mic can not only be relationship threatening but also bad for one’s physical health. Hence the need for regular shack snacks to revitalise the soul and keep you operating at your ultimate premium on the radio!
This next ‘Snack in the Shack’ recipe is one of my most favourite — not only because of its yummy taste but also because of the ease with which one can prepare it and cook it. For those who’ve been confined to their radio shack their whole life and have no idea what I am talking about, pikelets are little treats like scones, usually served with coffee or tea. They are very much like little pancakes and make for a simple but effective ‘Snack in the Shack’.
Here’s my special recipe:
INGREDIENTS
* 1 cup flour
* 1 tsp. cream of tartar
* 1/2 teaspoon bicarbonate of soda
* 1 egg
* A few drops lemon essence
* 2 Tbsp sugar
* milk
METHOD
1. Sift the first 3 ingredients together then add sugar.
2. Make a well in the centre of the mixture and drop in egg and some milk.
3. Mix from centre, gathering flour from the sides of the well.
4. Add milk as needed to make a thick batter.
5. Add a few drops of lemon essence to taste.
6. Drop batter into hot frying pan to make 3" circles.
7. Top with butter or jam.
